I just wrote an entire blog post and lost it because my laptop is a royal POS.
Needless to say I'm extremely beyond pissed off right now, so I'm just going to give you the recipe without talking anymore.

Okay I just finished this post and I'm coming back to add a bit now that I've cooled down. I just want to say that this recipe is great for Thanksgiving but outside of that it's honestly a quick and easy weeknight side dish as well! If you don't use it for the big holiday then try it out some other time -you won't regret it!
Just a small warning though, it will go bad if you store it in the fridge for too long! I'd say a maximum of 4 days storage time before it starts getting a bit sour! Nonetheless it's def delicious and worth making!!
Here we go!
Rosemary Garlic Mashed Cauliflower
Prep time: 10 minutes. Serves: 4
Ingredients:
1 Head of Cauliflower
4 tbsp Grass fed Butter (kerrygold) or Ghee
4 tbsp Olive Oil (kasandrinos)
2-4 tsp Granulated Garlic (or more to taste)
2 Sprigs of Fresh Rosemary
Salt & Pepper to taste.
Instructions:
Cut cauliflower into florets. Boil salted water & add in cauliflower. Boil until tender about 5-8 minutes or more depending on size. Remove cauliflower from water & combine with the rest of the ingredients in food processor. Process until smooth & serve warm.

Okay, I'm sorry... It really made me mad that I lost the whole post and had to type the recipe again plus redo this work etc because of this laptop. But really I should've known better and typed it up into a word document first. It's not exactly the first time I've had to redo an entire post before... Anyway good news is that I've cooled down now and I'm ready to move on, but not enough to wrote much more.
Oh how a seemingly silly thing can make us so upset!
But seriously though, I'm not perfect, and I was pissed.
